I know this
is a little bit after-the-fact… but I wanted to share a little bit about my
Thanksgiving here in Nicaragua.
First of
all, I dedicated the weeks leading up to Thanksgiving to making pumpkin pie.
I had to search high and low for powdered ginger and cloves, a rolling-pin and a pie dish. In the end I found just about everything, and came up with a few modifications. The pies turned out delicious! I made four during the week of Thanksgiving. I shared two with family and friends here in site, and I brought the other two to a PCV Thanksgiving celebration. Everyone that tried the pumpkin pie for the first time loved it. I have since showed a few friends of mine in site how to make it because they asked for the recipe.

My
Thanksgiving was fantastic. It was so great to catch up with my other PCV
friends, and see many of them that I hadn’t seen since August. We made a feast,
and afterwards I was the most full I remember being in my entire life. It was
great to have some down time with everyone and cook together.
During my
holiday and since then I am grateful for the new friends and family I have here
in Nicaragua, PC Family and Nicaraguans. I am so thankful for my site and the
fact that I feel fulfilled and happy with my daily life. I am grateful to have
such supportive friends and family back home that have stayed with me every
step of this journey. Finally I am thankful for having my basic needs met, I
have my health, food to eat, a job, a safe and comfortable house to live in,
and am surrounded by a supportive community. What more can a girl want? Happy
Belated Thanksgiving!
